Thai Chicken Meatballs

Ingredients:
Thai Chicken Meatballs:

1lb of Ground Chicken

1 egg

½ cup of almond flour

½ cup of ground Flaxseed

2 cloves of garlic, minced

1 tsp of ground Ginger

1 ½ tbsp of Soy sauce

1 tbsp of Red Curry paste

1 tbsp of Healthy U Malaysian Curry spice

Alternative to Healthy U Malaysian Curry spice

1 tbsp dried red chiles flakes

1 tbsp dried cardamom

1⁄2 ground cinnamon

1 tbsp coriander seeds

1 tbsp cumin seeds

1 tsp fennel seeds

1⁄2 tsp whole cloves

1⁄2 tsp black peppercorns


Instructions:
  1. Combine all ingredients into a bowl and roll into evenly shaped balls

  2. Bake at 400 F for 18 minutes


Coconut Curry:

2 tbsp of Oil

1 Orange bell Pepper, sliced

1 small Onion, diced

2 Zucchini’s, sliced

2 tbsp of Red Curry paste

1 can of Coconut milk

1 tbsp of Soy sauce

1 tbsp of Healthy U Malaysian Curry spice

⅔ cup of Cilantro


Instructions:
  1. In a pan on medium heat, add oil, onion, soy sauce, red curry paste, spice and cilantro. Saute for 4-5 minutes.

  2. Add vegetables into pan and cook until tender.
