Veggie Fritters

Prep time: 25 minutes - Cook time: 15 minutes - Total time: 40 minutes


Ingredients
  • 1-3 carrots, grated

  • 1 white onion, grated

  • 1 zucchini, grated

  • 1 tsp garlic salt

  • 1 tsp onion flakes

  • 1 egg

  • ½ cup - ¾ cup chickpea flour (or ½ cup coconut flour / ¾ cup almond flour)

  • 3 tbsp light olive oil, for pan-frying

Directions
  1. Combine all above ingredients and form into “patties”.

  2. Place oil in a pan on medium-high heat. Add veggie patties to the pan and lightly fry both sides.
