Prep time: 20 minutes - Cook time: 10 minutes - Total time: 30 minutes
1 head broccoli, steamed
1 packed cup basil leaves
1/4 cup toasted pine nuts
1/4 cup grated Pecorino cheese, plus for garnish
1/4 cup olive oil
2 tablespoons freshly squeezed lemon juice
2-4 garlic cloves, this can be strong if adding too much (go with personal preference)
Salt & pepper for taste
4 garlic cloves, thinly sliced
1 white onion, diced
1-2 (15-ounce) cans of cannellini beans, drained and rinsed
PAN-FRY and add pesto + water + freshly grated cheese
Steam one head of broccoli and add to a blender along with your basil leaves, toasted pine nuts, grated Pecorino cheese, olive oil, lemon juice, garlic cloves and salt and pepper to taste.
Next, heat some olive oil in a pan and add 1 diced white onion, sliced garlic cloves and 1-2 cans of cannellini beans, drained and rinsed.
Pan-fry and add some of the blended pesto, water for a thinner consistency and freshly grated cheese. Enjoy!
