Broccoli Pesto White Bean Sauce

Prep time: 20 minutes - Cook time: 10 minutes - Total time: 30 minutes


Broccoli Pesto:

1 head broccoli, steamed

1 packed cup basil leaves

1/4 cup toasted pine nuts

1/4 cup grated Pecorino cheese, plus for garnish

1/4 cup olive oil

2 tablespoons freshly squeezed lemon juice

2-4 garlic cloves, this can be strong if adding too much (go with personal preference)

Salt & pepper for taste



4 garlic cloves, thinly sliced

1 white onion, diced

1-2 (15-ounce) cans of cannellini beans, drained and rinsed

PAN-FRY and add pesto + water + freshly grated cheese

  1. Steam one head of broccoli and add to a blender along with your basil leaves, toasted pine nuts, grated Pecorino cheese, olive oil, lemon juice, garlic cloves and salt and pepper to taste.

  2. Next, heat some olive oil in a pan and add 1 diced white onion, sliced garlic cloves and 1-2 cans of cannellini beans, drained and rinsed.

  3. Pan-fry and add some of the blended pesto, water for a thinner consistency and freshly grated cheese. Enjoy!
