Cheesy Meatball Muffin

Prep time: 15 minutes - Cook time: 25 minutes - Total time: 40 minutes


2 lbs ground beef

3/4 cup almond flour

2 eggs

1/2 cup fresh oregano, chopped

1/4 cup green onion, chopped

2 cloves garlic, grated

2 chicken pepperettes, thinly sliced

1 tbsp Healthy U Italy Spice

1 cup mozzarella cheese, shredded

Serve with 1 jar (32 ounce) marinara sauce & noodles!

  1. Preheat the oven to 450F.

  2. Combine the beef, almond flour, eggs, oregano, green onion, garlic, pepperettes, and Healthy U Italy Spice in a large bowl.

  3. Divide meat mixture into evenly sized balls. Flatten the meatballs in your hand and add 1 cup of the mozzarella cheese into the centre. Reform the meat into a ball shape and make sure the cheese in the centre.

  4. Place the Cheesy Meatballs in a muffin tin.

  5. Bake for 20-25 minutes.

  6. Serve with your favourite marinara sauce and noodles!
