Chopped Cauliflower Salad

Ingredients

Salad Base:

  • 1 head of cauliflower, finely chopped

  • 1-2 bell peppers, chopped

  • 1 zucchini, chopped

  • ½ red onion, diced

  • 1 can chickpeas, rinsed and drained

  • ½ cup hemp seeds

  • ¼ cup cashews, roasted


Dressing:

  • 6 tbsp EVOO

  • 3 tbsp vinegar (any type)

  • 3 tbsp honey

  • 2 tbsp dijon mustard

  • 2-3 garlic cloves, minced

  • ½ tsp salt

  • Juice from 1 lemon

Directions
  1. Combine all ingredients in a large bowl and enjoy! (Salad lasts for days in the fridge)
