Soft, creamy, and just sweet enough, with a light crunch on top, these no-bake power balls taste like a treat but are made with simple, nourishing ingredients. Perfect for a quick snack, post-dinner sweet, or meal prep for the week.

Ingredients (Makes 16 balls)

  • 2 ½ cups almond flour

  • 2 cups cottage cheese, blended until smooth

  • 1 tbsp maple syrup

  • 1 tsp cinnamon

  • 1 tsp vanilla extract


Topping:

  • ½ cup white chocolate chips

  • 1 tbsp coconut oil

  • ½ tsp cinnamon


Directions

  1. In a large bowl, mix almond flour, blended cottage cheese, maple syrup, cinnamon, and vanilla until a soft dough forms.

  2. Roll into 16 evenly sized balls.

  3. Place in the freezer for 20 minutes to firm up.

  4. In a small bowl, melt white chocolate chips with coconut oil until smooth, then stir in cinnamon.

  5. Dip or drizzle each ball with the cinnamon chocolate mixture.

  6. Let set for a few minutes, then enjoy.
