Ingredients (Makes 16 balls)
2 ½ cups almond flour
2 cups cottage cheese, blended until smooth
1 tbsp maple syrup
1 tsp cinnamon
1 tsp vanilla extract
Topping:
½ cup white chocolate chips
1 tbsp coconut oil
½ tsp cinnamon
Directions
In a large bowl, mix almond flour, blended cottage cheese, maple syrup, cinnamon, and vanilla until a soft dough forms.
Roll into 16 evenly sized balls.
Place in the freezer for 20 minutes to firm up.
In a small bowl, melt white chocolate chips with coconut oil until smooth, then stir in cinnamon.
Dip or drizzle each ball with the cinnamon chocolate mixture.
Let set for a few minutes, then enjoy.
