Ingredients List:
2 ½ cups almond flour
½ cup arrowroot starch
2 tsp baking powder
2 tbsp poppy seeds
¼ cup maple syrup
¼ cup melted coconut oil
1 egg
Zest from 1 lemon
Juice from 1 lemon
Icing: Vanilla greek yogurt
Lemon zest
Instructions:
Mix all ingredients in a bowl and add evenly to a muffin pan
Bake at 375F for 20-22 minutes
Top cooled muffins with vanilla greek yogurt and lemon zest
