Dal Tadka

Lentils:

1 cup of Yellow Split pea Lentils

4 cups of water

½ cup of Healthy U India Spice

Alternative to Healthy U India Spice

2 tsp ground coriander

1 tbsp ground cumin

1 tbsp garam masala

2 tsp ground turmeric

2 tsp dry ground mustard

2 tsp salt & black pepper


Instructions:
  1. Cook for 45-60 minutes, low heat and keep stirring throughout

Stew:

1 red onion, diced

¼ cup of Oil

1 tsp of Salt

2 tbsp of Healthy U India Spice

1 tbsp of Garlic, minced

1 tbsp of Ginger, minced

4 cups of Cherry Tomatoes, halved

3 Carrots, diced

1 Eggplant, diced

3 cup of Fresh Spinach

1 cup of Cilantro, chopped


Instructions:
  1. In a pot add in Oil, Onions, Salt, India spice, Garlic and ginger. Sautee. Then add Cherry tomatoes, Carrots and Eggplants.

  2. Once the vegetables have softened, add Yellow split pea lentils. Combine and add Spinach and Cilantro

Tadka:

1 tbsp of Oil

1 tbsp of Garlic, minced

1 tsp of Cumin Seeds

1 tsp of Chili powder

2 Chili, whole


Instructions:
  1. On a fry pan, add the ingredients and saute for 3-5 minutes. Add on top of Dal Tadka
