Roasted Balsamic Squash

Prep Time: 30 min - Cook time: 1 hr 5 min- Total time: 1 hr 35 min



1 Acorn squash
  1. Roast at 425F for 30-40 minutes

1 cup balsamic vinegar
  1. Bring to a boil & simmer for 15-25 minutes!

  2. Cut up the squash into wedges. Cut off the skin.

  3. Lay on a baking sheet with parchment paper. Drizzle with balsamic sauce and cooking oil. Bake!

Add feta cheese & parsley as a bonus topping! Enjoy ❤️
