Ingredients (Makes 3 wraps)

  • 2½–3 cups freshly grated cheese (any variety, I love sharp cheddar)

  • 3 medium zucchinis, thinly sliced using a mandolin, vegetable peeler, or knife

  • ½ tsp garlic powder

  • ½ tsp salt

  • Extra virgin olive oil spray


Instructions

  1. Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.

  2. Slice the zucchini thinly using a mandolin, peeler, or sharp knife. Arrange the slices slightly overlapping on the parchment paper to form three circular “wrap” shapes.

  3. Spray lightly with olive oil and sprinkle with garlic powder and salt.

  4. Top evenly with grated cheese, ensuring the zucchini is mostly covered.

  5. Bake for 18 minutes, or until the edges are golden and the cheese has melted and set.

  6. Cool for a few minutes, then gently lift each wrap using a spatula. Once cooled slightly, they’ll be flexible and ready to roll!


To Serve

Fill with your favourite toppings, turkey and avocado, egg salad, grilled chicken and veggies, or roasted red pepper hummus. Roll it up, slice in half, and enjoy!

  • Fridge: Store wraps (layered with parchment paper) in an airtight container for up to 4 days.

  • Freezer: Freeze individually wrapped in parchment paper, then store in a freezer bag for up to 1 month.
