Salted Caramel Choc-Chip Cookie Bites/Fruit Salad

Velvety chocolate loaf with a secret ingredient! Perfect for all those cake lovers out there!


Ingredients List:

Salted caramel bites:

  • 2 eggs

  • 2 tsp vanilla

  • 1/2 cup coconut oil, melted

  • 1/2 cup maple syrup

  • 2 cups almond flour

  • 1/4 cup coconut flour

  • 3 tbsp chia seeds

  • 1 tsp baking soda

  • 1/2 cup chocolate chips

  • 1 cup Skor bits

  • 1 tsp flaked sea salt

Fruit salad:

  • 1 pint blueberries

  • 1 pint strawberries

  • 4 kiwis, sliced

  • 4 tangerines, in wedges

  • 2 cups grapes, halved

  • 2 cups pineapple, chopped

  • 2 limes, zest and juiced

  • 1 tbsp honey



Instructions:

Loaf:

  1. Preheat the oven to 350 F.

  2. In a large bowl whisk almond flour, cacao powder, salt, baking soda until combined.

  3. In another bowl whisk eggs with coconut oil, maple syrup and vanilla extract. Stir in almond butter.

  4. Add the dry ingredients to the wet ingredients and mix until combined. (Try not over mix or the loaf will develop a tougher texture!).

  5. Stir in zucchini and chocolate chips.

  6. Pour batter into a parchment-lined or oil-coated pan.

  7. Bake for 18-22 minutes.

  8. Let the loaf cool for 15 minutes before running a butter knife along the edges to separate it from the pan.

Icing:

  1. Melt coconut oil and chocolate either on the stove top or in increments (10 seconds at a time) in the microwave.

  2. Combine applesauce and chocolate mix. Add in maple syrup and cocoa powder.

  3. Mix until you reach a smooth consistency.

  4. Drizzle on top of loaf.

Fruit Salad

  1. Combine all ingredients and mix!
