Seedy Banana Granola Chunks

Dry Ingredients

¾ cup unsweetened coconut flakes (medium)

¾ cup sesame seeds

½ cup sunflower seeds, unsalted

½ cup pumpkin seeds

¼ cup ground flaxseeds

¼ cup poppy seeds

2 tbsp chia seeds

½ tsp salt


Wet ingredients

1 banana (over-ripe), mashed

2 tbsp tahini paste

⅓ cup maple syrup

1 tsp vanilla extract


Instructions
  1. Preheat oven to 350F, line baking tray with parchment paper

  2. In a bowl, mash banana, and then combine remaining wet ingredients

  3. Add dry ingredients to this bowl and mix together

  4. Pour mixture on baking tray, and pat it down with spoon

  5. Bake for 30-35 minutes total, except mix with spoon every 10 minutes (try to maintain chunks)

  6. Let it cool before serving
