Beet Noodle Pasta

4 beets, peeled & spiralized

½ cup feta cheese, crumbled

¼ cup fresh dill, finely chopped

Juice from 1 lemon

2 tbsp oil

½ tsp salt

1 cloves garlic, minced

½ cup canned chickpeas, drained & rinsed

  1. Heat oil in a large skillet over medium heat and add beet noodles

  2. Add rest of ingredients to skillet and cook for 10-15 minutes until noodles are al dente, tossing noodles occasionally
