Cashew Chicken

2 boneless, skinless chicken breasts, cut into 1-inch pieces

1 red onion, chopped into large chunks

1 cup raw unsalted cashews

3 cups broccoli, florets


3 tbsp honey

2 tbsp rice wine vinegar

2 tbsp sesame oil

2 tbsp soy sauce

3 cloves garlic, minced

2 tsp freshly grated ginger

Toppings: chives and sesame seeds

  1. In a baking sheet, spread out the cubed chicken and add broccoli florets on top.

  2. Add cashews, red onions, and half of the sauce on top.

  3. Bake at 375F for 25-35 minutes. Once cooked, drizzle the remaining sauce on top and add toppings if desired.
