2 boneless, skinless chicken breasts, cut into 1-inch pieces
1 red onion, chopped into large chunks
1 cup raw unsalted cashews
3 cups broccoli, florets
3 tbsp honey
2 tbsp rice wine vinegar
2 tbsp sesame oil
2 tbsp soy sauce
3 cloves garlic, minced
2 tsp freshly grated ginger
Toppings: chives and sesame seeds
In a baking sheet, spread out the cubed chicken and add broccoli florets on top.
Add cashews, red onions, and half of the sauce on top.
Bake at 375F for 25-35 minutes. Once cooked, drizzle the remaining sauce on top and add toppings if desired.
