Cinnamon Flax Loaf

Prep time: 5 minutes - Cook time: 35-40 minutes - Total time: 40-45 minutes

Looking for an OMEGA-3 loaded, anti-inflammatory, hormone balancing and gluten-free recipe, look no further! For the entire loaf, we are talking 0g NET carbs, 70g fibre and 80g protein - a nutrition powderhouse!

  • 2 cups ground flax seeds

  • 1 tbsp baking powder (or ¾ tbsp baking soda)

  • 2 tbsp cinnamon

  • 6 eggs

  • ⅓ cup coconut oil

  • ½ cup water

  • Optional toppings: 1 tbsp maple syrup, 1 tsp cinnamon, 2 tbsp crushed walnuts

  1. Combine all ingredients in a large bowl (excluding toppings).

  2. Pour into a parchment lined loaf pan and add toppings.

  3. Bake at 350F for 35-40 minutes. Enjoy!

*Pro tip store in an airtight container or ziploc bag, and toast before serving!
