1-2 apples, sliced in circular shapes (I eat any leftover apple pieces that don’t make it to the platter)
1/4 cup goat cheese (room temperature)
1/4 cup toasted pumpkin seeds, cashews, walnuts (any nut / seed combo works)
1-2 tbsp honey (just for the drizzle)
1/2 tbsp fresh mint, thinly sliced
Slice apples into ½-inch slices and plate
Spread on goat cheese to each slice and top with crushed nuts/seed combo, a drizzle of honey and finish off with a garnish of freshly sliced mint leaves. Enjoy!
