Halloumi Basil Balsamic Kale Salad

1 head of black kale

4 beets, cooked and chopped

1 package Halloumi cheese, cubed

¼ cup toasted almond slices

Basil Balsamic Dressing:

3 tbsp olive oil

2-3 tbsp balsamic vinegar

1 tsp honey

1 tsp dijon mustard

1 garlic clove, minced

3 leaves basil, finely chopped

  1. De-stem and chop black kale. Add to a large bowl

  2. Add beets, halloumi cheese, and toasted almond slices to the bowl

  3. Prep the basil balsamic dressing by mixing all ingredients (olive oil, balsamic vinegar, honey, dijon mustard, minced garlic, and basil) and drizzle over the salad

  4. Toss dressing with salad and enjoy!
