Healthy U Salad

Prep time: 5 minutes - Cook time: 10 minutes - Total time: 15 minutes


My # 1 rated salad is HERE. Lasts for days in the fridge. It tastes best when it sits for an hour or even overnight, giving the veggies time to absorb the dressing!

Ingredients
  • 1-2 cups cabbage, thinly sliced

  • 1 cup brussel sprouts, thinly sliced 

  • 2-3 medium apples, diced

  • ½ cup diced red onion

  • ½ cup pecans, roasted 

  • 1 can white cannellini / kidney beans

 

Creamy Honey Dijon Dressing

  • ½ cup plain Greek yogurt

  • 2 tbsp dijon mustard 

  • 4 tbsp honey 

  • 2 tbsp extra virgin olive oil

  • 2 tsp each sea salt, garlic powder, onion powder



Directions
  1. Rinse and drain white cannellini beans. Place on a baking sheet and sprinkle with 1 tbsp olive oil and salt/pepper. Roast at 400F for 10 mins or until crispy.

  2. Combine salad ingredients in a large bowl

  3. In a separate bowl combine dressing ingredients and stir until combined. Top salad with dressing and enjoy!
