Chocolate Peanut Butter Cups

These chocolate peanut butter cups have a healthy twist you’ll want to make on repeat, with over 75% less fat than store-bought versions just by using peanut butter powder alone! Freezer-friendly, kid-approved, and made with just a few simple ingredients.


Prep time: 20 minutes

Total time: 4 hours and 20 minutes (including freezing time)


Serves: 12 servings (4 g of protein per serving)


Ingredients
  • 1 cup peanut butter powder

  • ½ cup unsweetened applesauce

  • 1 cup dark chocolate chips + ¼ tsp coconut oil for melting

  • Flaky sea salt for topping



Directions
  1. In a bowl, mix PB powder and apple sauce. Mix until mixture is combined, into a thick consistency.

  2. Roll into 12 balls.

  3. Melt dark chocolate chips with coconut oil.

  4. Line a baking sheet with parchment paper and lay out 12 muffin tins (I recommend the silicone ones, as they are easy to pop out).

  5. Add 1 teaspoon of chocolate at the bottom of each muffin tin. Place a ball in each.

  6. Thumb print the balls down to combat everything together.

  7. Finish it off with 2 more teaspoons drizzled on top of each muffin tin.

  8. Bang down each muffin tin so the chocolate flattens out.

  9. Freeze for 4 hours and top with flaky sea salt.
