Healthy U Veggie Loaded Poutine

Prep time: 25 minutes - Cook time: 20-25 minutes - Total time: 45-50 minutes


Layer 1:

1 bag heirloom carrots

salt, to taste

1-2 tbsp olive oil

Layer 2:

cheese curds, to preference

Layer 3:

2 cups vegetable broth

¾ tsp onion powder

3 tbsp nutritional yeast

1 tbsp soy sauce

½ tsp dijon mustard

¼ cup arrowroot or tapioca flour

  1. Wash and peel carrots.

  2. Cut carrots into the shape of french fries and place them on a lined baking sheet. Drizzle with olive oil and season with salt to taste.

  3. Bake at 425F for 20-25 minutes, flipping halfway through.

  4. Add the vegetable broth, onion powder, nutritional yeast, soy sauce, mustard, and flour to a pot. Bring to a boil while constantly whisking.

  5. To a plate, add a layer of roasted carrots, topped with cheese curds and gravy. Serve hot and enjoy!
