Sheet pan pancakes

Prep time: 10 minutes - Cook time: 18-20 minutes - Total time: 28 - 30 minutes


1 cup almond flour

1 cup tapioca flour

1 cup unsweetened applesauce

4 eggs

1 tsp baking soda

Optional: 1 cup Cadbury mini eggs (crushed), Coconut oil

  1. Preheat oven to 350ºF & line a baking sheet with coconut oil or parchment paper

  2. Mix all ingredients in a large bowl until smooth until smooth

  3. Bake for 18-20 min until cooked through

  4. Remove from oven, cut into squares and serve when hot
