African Nutty Stew

1 tbsp oil

1 medium sweet onion, diced

3 cloves garlic, minced

1 tbsp ginger, finely chopped

1 red bell pepper, diced

3 carrots, diced

1 can diced tomatoes

1 cup dried red lentils

Salt, pepper, chili powder & cumin to taste

⅓ cup natural smooth peanut butter

4 cups vegetable broth

4 cups baby spinach

Fresh cilantro

Roasted peanuts

  1. Heat oil in a large pot over medium high heat and add garlic, onion & ginger. Cook until onions are translucent

  2. Add bell pepper, carrots, tomatoes, lentils & spices. Bring to a boil & let simmer for 5 minutes.

  3. Add vegetable broth & peanut butter then mix until smooth then over pot & let simmer for 20-25 minutes

  4. Add spinach and cook until spinach is wilted.

  5. Serve and garnish with cilantro & peanuts
