Prep time: 15 minutes - Cook time: 45-50 minutes - Total time: 60-70 minutes
2 tbsp EVOO
2-3 garlic cloves, finely chopped
1 small brick of feta cheese, cut in half
1 small pint of cherry tomatoes, halved
Fresh basil, chopped
Cut spaghetti squash in half lengthwise and place on a lined baking sheet.
Add EVOO, garlic, feta, and cherry tomatoes to both halves.
Bake at 400F for 45-50 minutes (lower rack, to prevent burning of tomatoes).
Once baked, remove all insides from the squash and add to a large bowl.
Top with balsamic glaze and fresh basil.
