Baked Feta Spaghetti Squash

Prep time: 15 minutes - Cook time: 45-50 minutes - Total time: 60-70 minutes

  • Spaghetti squash

  • 2 tbsp EVOO

  • 2-3 garlic cloves, finely chopped

  • 1 small brick of feta cheese, cut in half

  • 1 small pint of cherry tomatoes, halved


  • Balsamic glaze

  • Fresh basil, chopped

  1. Cut spaghetti squash in half lengthwise and place on a lined baking sheet.

  2. Add EVOO, garlic, feta, and cherry tomatoes to both halves.

  3. Bake at 400F for 45-50 minutes (lower rack, to prevent burning of tomatoes).

  4. Once baked, remove all insides from the squash and add to a large bowl.

  5. Top with balsamic glaze and fresh basil.
