Pao de Queijo (Brazilian Cheese Bread)

Ingredients:

5 cups baby spinach, washed

1 egg

3 tbsp oil, divided

⅔ cup almond milk

1 cup tapioca flour

½ cup almond flour

1 tbsp coconut flour

½ cup cheddar cheese

½ tsp salt




Instructions:
  1. Preheat oven to 375ºF and spray muffin tray with oil

  2. In a large skillet over medium-low heat, saute spinach with 1 tbsp oil

  3. In a large bowl, add cooked spinach and remaining ingredients, combine together

  4. Scoop mixture into muffin tray and bake for 20-22 minutes
