Pumpkin Pie Cookie Dough

Prep time: 15 minutes - Cook time: 0 minutes - Total time: 15 minutes

  • 1 cup cottage cheese, blended (32g protein)

  • 1 cup pumpkin puree

  • ½ cup protein or collagen powder, vanilla (approx. 40g protein)

  • 2 cups almond flour (48g protein)

  • ¼ cup maple syrup (½ cup if using natural protein powder)

  • 1 tbsp pumpkin spice mix

  • 1 tsp vanilla

  • ½ cup white chocolate chips

  1. Combine all ingredients in a large bowl (add white chocolate chips last).

  2. Fill a muffin tray with the cookie dough and store it in the fridge (can also store it in a large bowl or container).
