Ingredients
1 cup cottage cheese, blended (32g protein)
1 cup pumpkin puree
½ cup protein or collagen powder, vanilla (approx. 40g protein)
2 cups almond flour (48g protein)
¼ cup maple syrup (½ cup if using natural protein powder)
1 tbsp pumpkin spice mix
1 tsp vanilla
½ cup white chocolate chips
Directions
Combine all ingredients in a large bowl (add white chocolate chips last).
Fill a muffin tray with the cookie dough and store it in the fridge (can also store it in a large bowl or container).
