1 onion, sliced into ¼-inch rings
2 eggs, whisked
¼ cup parmesan cheese, grated
2 tbsp golden ground flax seed
2 tbsp almond flour or 1 tbsp coconut flour
2 tbsp tapioca or arrowroot flour
½ tsp salt
Preheat oven to 400ºF and line baking tray with parchment.
In a small bowl, combine ground flax seed, almond flour, tapioca flour and salt.
Dip onion rings into egg mixture then in flour mixture and evenly spread on baking tray. Repeat with all rings. (TIP: double dip in batter for extra crispy onion rings)
Spray onion rings with cooking oil then sprinkle with parmesan cheese. Bake for 18-25 minutes.
