Chocolate Chip Cookie Dough Muffins

YES, each muffin has 15g of protein and are made with low carb flour alternatives to support healthy blood sugars. The perfect snack all day, everyday!


Ingredients
  • 3 cups white kidney beans (2 x 15 ounce cans), drained and rinsed

  • 4 eggs

  • 2/3 cup maple syrup

  • 1 1/2 cups almond flour

  • 1/2 cup coconut flour

  • 1 cup natural peanut butter (or almond butter)

  • 2 tsp baking soda

  • 2 tsp vanilla

  • 1/2 tsp salt

  • 3/4 cup chocolate chips


Directions
  1. Combine all ingredients in a large bowl.

  2. Scoop into a muffin tin. Bake at 375F for 20-22 minutes. Enjoy!
