Ingredients
Fruit Layer
4 nectarines, cubed
1 tsp lemon juice
2 tbsp maple sugar
Crumble Layer
1 ½ cup blanched almond flour
½ cup tapioca or arrowroot flour
1 tsp baking powder
¼ cup maple sugar
2-3 tbsp coconut oil
1-3 tbsp almond milk
1 tsp pure vanilla extract
Instructions
Preheat oven to 375ºF.
In a 9 x 9 baking dish, mix all ingredients for the fruit layer together, ensuring nectarines are coated.
In a medium mixing bowl, mix together all crumble layer ingredients.
Layer crumble mixture on top of fruit layer and bake for 30 minutes.
